I figured before the snow melts, I’d enable you to get some warm comforting dishes that make your heart feel full (however, not your bellies).
In an effort to stop venturing out to eat a lot with Tony, I whipped up this easy and delicious pasta with all the ingredients in the I could find in the fridge. We have been doing date evenings in more often lately and it’s been incredibly fun to create meals which are both healthy, creative, delicious and satisfying.
Do you do a time nights in? Grab a wine and let’s get cooking!
It’s simple enough to throw this meal together, especially when you take the liberty of cleaning up all the vegetables from the fridge. Know that you can really put vegetable into this pasta and it might be exceptionally tasty. I believe broccoli, corn and perhaps a little asparagus will be delicious. But hey, totally up to your imagination on everything you can add!
Another best part about this pasta is that you can allow it to be gluten free through the use of gluten free pasta. They sell a few great types at Trader Joe’s and Whole Foods. I love a quinoa dark brown grain pasta, but any kind of GF pasta should be fine.
Wanna ensure it is vegetarian? Omit the chicken and use vegetarian broth. Still beautiful!
Best yet? That is meals all on it’s own. Plenty of veggies and protein. Although I’ll admit that we love portion it with garlic bread; I can’t get over how delicious Tony’s formula is. Probably I’ll obtain him to talk about it someday.
Hope you love this meal! If you make it or any additional recipe, make sure to label #ambitiosukitchen on Instagram therefore i can see your creations. xo!
Garlic clove Parmesan Pasta with Poultry & Roasted Bell Peppers
Ingredients
2 large carrots, peeled sliced
1 zucchini, chopped
4 tablespoons chicken broth, plus more if necessary
4 garlic clove cloves, minced
1/4 cup chopped fresh basil
1 teaspoon oregano
sodium and pepper
Instructions
Preheat broiler to high. Cut bell peppers in half and place on foil-lined cooking sheet, skin edges up. Broil for 8-10 a few minutes or until blackened. Once blackened, remove from range and transfer to a plastic ziploc handbag. This can help the skin perspiration so that you have the ability to peel off it off easily. Keep in handbag 10 minutes, then peel and slice into strips; set aside.
In a medium bowl, mix collectively two tablespoons of olive oil, poultry broth, garlic, basil, parmesan cheese, basil and oregano; reserve. Next, generously period chicken with salt and pepper and set aside.
While peppers are cooking and/or sweating, you can cook the pasta according to package directions.
In a big skillet, drizzle a teaspoon of essential olive oil and add in carrots and zucchini. Saute while pasta cooks. If carrots and zucchini absorb all oil add in several tablespoons of poultry broth. Next, drain pasta, transfer back again to skillet and switch warmth to low; stir within the Parmesan mozzarella cheese mixture. Add in chopped up roasted bell peppers. Add salt and pepper to flavor. Keep pasta over low warmth while you make the chicken.
Heat another skillet over medium-high high temperature and drizzle two teaspoons of olive oil in. Add chicken and cook for 6-8 minutes on each side or until poultry is no much longer pink and juices run clear. Slice rooster and then add to pasta. Sprinkle with a bit more parmesan cheese. Serves 6, about 1 1/2 mugs each.
This was absolutely delicious!
I do a low carb diet plan and ommitted the pasta & added sautéed mushrooms at the end!
