How was your weekend? Mine was filled with good eats and lots of time with Tony; it had been his last weekend back home before he minds out for springtime teaching down in Az. I’m amazed at how fast the off period has truly gone. It feels like I just shifted to Chicago, but I’m therefore happy that it feels like home.
Last night we spent the day with his family members hanging out and watching LOTS of Television like Nascar (don’t ask) and the Oscars. I love parties because I’m generally in a position to bake or make a few things that Personally, i want to consume myself… oops.
I ended up making a edition of my strawberry basil bruschetta with a fresh creamy spreadable goat mozzarella cheese I found at Whole Foods. Next, I made a new edition of my crunchy cashew thai quinoa salad and I’m hoping to provide that for you immediately after I perfect it; it’s more of a spring salad anyway. For any dessert, I produced Detoxinista’s flourless peanut butter blondies and made a new cookie recipe (you will see it soon!).
In the meantime, I crafted a cookie that you can eat for breakfast. I’ve been dunking these in chocolates almond dairy for days gone by week which has led me to fundamentally being obsessed with eating cookies for breakfast time. Trust me, you’ll be too after cooking up a batch.
At first it seemed weird, you know, eating cookies for breakfast and all. Needless to say I determined the diet and viewed all the wholesome substances in this formula and fell in love. A lot of good things happening in these! Let’s discuss the cookie goodness.
More on the subject of these cookies and their nutrition: There’s no flour, butter, oil or refined sugars added thus they don’t weigh you down each day. As always, they’re An easy task to make! Whip them up and you can enjoy them through the entire week, or being a post-workout snack. They’re crunchy externally and soft in the centre, just just how you would like a cookie to become. As the days go on, they get softer. They’re best kept in an airtight pot at room temp for up to 7 days; you can also keep them in the fridge and heat up when you’d like one.
These cookies are filled with omega-3s from both the chia seeds and walnuts. Omega-3s are wonderful for the human brain, your center and the disease fighting capability. A lot of people will neglect to get enough omega-3s within their diet once we tend to not eat enough fish, walnuts, or veggies with the type of fat. You can read more about 0mega-3s here
Walnuts, almonds and chia seed products:
Walnuts are an excellent source of omega-3s but did you know that they also contain copper, vitamin e, and other anti-inflammatory properties? I’ve by no means been even more of a lover of walnuts until now! They’re especially amazing when toasted (which is why I did so it within the formula!). Read more on walnuts here
Almonds give the cookies a nutty, sweet taste. They’re also high in vitamin E, potassium, magnesium and obviously a wonderful source of healthy fats. Within the formula, you’ll roast your very own almonds to improve flavor, but of course you can procedure them organic to protect their healthy oils.
Chia seed products are high in dietary fiber, protein, and omega-3s. Chia seed products expand when they touch liquid, therefore they are a fantastic addition to the cookies. Not only do they provide crunch, but they also help to keep you full!

Next, place toasted nuts in the food processor. Procedure until completely even and incredibly creamy much like peanut butter; this should take about 5 minutes.
Combine honey, vanilla, egg, baking soda, cinnamon and salt to processor and practice again until very well combined, about 2 short minutes. Transfer to a medium bowl and collapse in cherries, delicious chocolate chips, chia seeds and oats. Use a little cookie scoop to drop cookies and move into balls. Put on cookie sheet after that slightly flatten using the palm of the hand. Bake for 7-9 moments or until sides are slightly golden dark brown. Allow to awesome on cookie sheet for 10 minutes, then transfer to a wire rack to finish air conditioning. Makes 15 cookies. Shop within an airtight container – cookies will keep well for 3-5 days.
Feel absolve to add or subtract elements. These cookies are flexible and I love using what I’ve available. Use maple syrup instead of honey. You can sub any kind of dried fruits for the cherries, or leave them out totally.
Hi Monique,
I just tried to create these but will need to have done some thing extremely wrong. The nuts seemed hot while i added these to my cuisinart, but I blended for 5 minutes and added the honey, egg, and vanilla. Once I did the mixtures turned into a popular oily puddle in my own cuisinart. Not sure where I proceeded to go wrong. I’ve acquired such success with you quality recipes before. I am attempting to include almond flour to salvage what I have. Any suggestions?
Hiya,
I made these last night with some modifications: more of delicious chocolate chips (1/3 cup) and We also food-processed oats a bit simply because mine were steel-cut.
I would suggest using only liquid honey for easier mix of all elements. Also next time I would dual the amount of honey as they were a little under-sweetened to my flavor.
